Riesling 2021-SOLD OUT
Production: 171 cases
In the Vineyard
The impact of the October 2020 freeze, and the subsequent decimation of the Colorado wine grape crop, is becoming evident in the wines we have available. While we have not made a Riesling in the past, the dearth of grapes and serendipitous availability of a small amount for Riesling juice from the Grand Valley prompt us to give this noble variety a try.
Brix: 22 – 23
pH: 3.38-3.55
Titratable Acidity: 5.4 g/l
In the Cellar
We receive 450 gallons of juice on November 11. The fermentation begins very cold and is slow to establish.
Peaking at 64 degrees, the fermentation is complete on November 27. No malolactic fermentation is allowed and the clear wine is transferred to tank for cold and heat stabilization. Floral notes of jasmine are prominent at bottling on August 17 and 18, 2022
