In the Vineyard
Planted in 2018, these vines endured the worst drought in 40 years in 2018, and a freak freeze of 3 degrees Fahrenheit in October 2020 to produce our first estate-grown Pinot Gris. Harvested in early October, the young vines yielded a little more than a ton of beautiful fruit.
In the Cellar
Crushed right after harvest, 2/3 of the crop was pressed immediately and 1/3 remained on the skins for 2 hours to extract a bit of copper color and some additional flavors not available in the juice itself.
The juice characteristics were excellent:
Brix: 22.5
pH: 3.13
Titratable Acidity: 5.9 g/l
Flavor light, crisp acidity.
After settling overnight, the clear juice was inoculated and a cool fermentation completed nearly a month later on November 2. Malolactic fermentation was prevented, preserving a faint green apple flavor in addition to the citrus and melon flavors from the initial fermentation. Following cold stabilization in the Colorado winter, the wine was filtered, and bottled for release in early June.
