In the Cellar
All the grapes are de-stemmed, but not crushed, given a cold soak of from 1 to 3 days and inoculated with yeast chosen to bring out the characteristics specific to each variety. Fermentations run to completion in as little as 9 days and as long as 3 weeks. All batches are sent through malolactic fermentation and all are barreled down in fairly neutral barrels for at least 1 year of aging. Bench trials determine the final blend and the vintage is brought together in mid-2025 for bottling and release in late 2025.
