Production:
In the Vineyard
Grown in one of the oldest plantings in the Grand Valley AVA in Colorado, the Petite Sirah basks in the intense sunlight of a dry dessert climate. The inky color deepens and the tannins accumulate as the sugars rise. We pick and crush just over 3 tons of perfectly ripened fruit on October 5.
In the Cellar
The day’s harvest is de-stemmed into small, one ton vats. Following a 5 day cold soak, each vat is inoculated and the fermentation proceeds to dryness on October 24. Malolactic fermentation is encouraged and the fermentation peaks at 80 degrees. After a 3 day extended maceration, the new wine is pressed to tank, allowed to settle overnight, and then transferred to barrel. Graceful aging in neutral barrels for 19 months softens the substantial tannins and brings the dark fruit forward. The black pepper flavors often associated with this grape are muted in this vintage leaving the fruit flavors more pronounced. In mid-August of 2025 we bottle 147 cases and release the vintage at the beginning of September.
