In the Vineyard
Petit Verdot originated in Southern France and was historically used in small amounts in Bordeaux blends to add tannins and savory notes. When grown in the warmer climate of the Grand Valley the wine yields blueberry, violet, and jammy components, while still retaining some of its savory notes and deep color.
In the Cellar
Very dark color, smooth tannins, fruity and floral in flavor, seeds and skins ripe, juice temp 55 F.
The fermentation proceeded slowly, never reaching more than 64 degrees. Achieving dryness on November 18, the wine was allowed to cold soak at 58 degrees for a week. Pressed to barrel on November 25. Aging 24 months in barrel allows the tannins to soften and integrate with the other components of the wine. Bottled in late November 2021.
